Cookies
3/4 cup THC-Infused butter, softened to room temperature

Instructions for making your own THC-infused butter
Step 1: Grind Your Cannabis Flower
First, grind 7 grams of Falcanna Gorilla Cookies flower. The finer you grind your flower, the more THC will be activated (making for more potent butter).
Step 2: Prepare Your Flower for Activating
Pre-heat your oven to 220 degrees. Put a sheet of aluminum foil on a baking sheet, and spread your ground cannabis flower onto the sheet.
Step 3: Activating Your Flower’s THC (Decarboxylation)
Once preheated, place your ground cannabis flower sheet into the oven. Bake for 50 minutes and then remove from the oven and let it cool.
The activated cannabis flower will have lost some of its green color and turned crispy.
Note: Be sure to turn on your ventilation fan and open your kitchen windows if possible. Baking cannabis can be very aromatic, so plan accordingly.
Step 4: Infusion
Combine 1 cup butter and 1 cup water in a pot and bring to a simmer over low heat or until the butter melts. Combine your activated cannabis flower with the butter and water and stir. Let it steep at a low temperature (180 degrees) for 3 hours. Stir often to prevent burning.
Step 5: Straining
After steeping, allow the thc-infused butter mixture to cool for one hour to prevent injury while straining.
Prepare a bowl, a strainer, and a cheesecloth for straining.
Once the mixture is cool to the touch, begin pouring the thc-infused butter mixture through the cheesecloth and strainer. This removes as much plant material as possible from your butter.
Step 6: Cooling
After you’ve removed as much plant material as possible, pour your thc-infused butter into a sealable tupperware and place in the refrigerator overnight.
The THC-infused butter will separate and solidify on top of the water.
Remove the butter from the water and your butter is now ready for baking!
Instructions for making THC-Infused Gorilla Thin Mint Cookies:
In a large bowl using a handheld mixer or stand mixer fitted with a paddle attachment, beat the thc-infused butter for 1 minute on medium speed until completely smooth and creamy. Add the granulated sugar and beat on medium high speed until fluffy and light in color. Beat in the egg, vanilla extract, and peppermint extract on high speed. Scrape down the sides and bottom of the bowl as needed.
Sift the flour and cocoa powder together in a medium bowl. Whisk in the baking powder and salt until combined. On low speed, slowly mix into the wet ingredients until combined.
Divide the dough into 2 equal parts. Roll each portion out onto a piece of parchment to about 1/4″ thickness. Stack the pieces (with parchment paper between) onto a baking sheet and refrigerate for at least 1 hour. Chilling is important to create the right consistency for your thin mint cookies. If chilling for more than a couple hours, cover the top dough piece with a single piece of parchment paper. You can chill for up to 2 days.
Once chilled, preheat the oven to 350°F. Line 2-3 large baking sheets with parchment paper. Remove one of the dough pieces from the refrigerator and using a 2-inch round cookie cutter, cut in circles. Transfer the cut cookie dough to the prepared baking sheet. Re-roll the remaining dough and continue cutting until all is used.
Bake for 8-10 minutes or until the edges appear set. The cookies will seem very soft in the centers. Make sure you rotate the baking sheet halfway through bake time. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely before dipping in chocolate.
Once the cookies are cool, begin the topping: Melt the chopped chocolate and oil together in a double boiler or (carefully!) use the microwave. For the microwave, place the chocolate and oil in a medium heat-proof bowl. Melt in 15 second increments, stirring after each increment until completely melted and smooth. Once melted, stir in the peppermint extract. Dip each cooled cookie completely into the chocolate and use a fork to lift out. Tap the fork gently on the side of the bowl to allow excess chocolate to drip off. Place cookie onto a parchment or silicone baking mat-lined baking sheet. Place the baking sheet into the refrigerator to help the chocolate set. Once set, enjoy!
Cover and store leftover cookies at room temperature for up to 2-3 days or in the refrigerator for up to 1 week. The cookies taste delicious cold. I love eaten straight from the freezer!
And voila! You’ve just made a delicious and fun THC-infused thin mint cookie that’s made from scratch: perfect for special occasions, holidays or weekends with friends.
Storing your THC-Infused Thin Mint Cookies:
Your thin mint cookies will stay fresh at room temperature for about 2-3 days when stored in an airtight container.
If placed in an airtight container your thin mint cookies will last in the fridge for up to two weeks.
Thin Mints, like most Girl Scout cookies, can last up to a whole year in the freezer when stored properly in an airtight container

FAQ “Gorilla” Thin Mint Cookies
What is the difference between making cookies with RSO versus making cannabutter from flower?
Both methods produce delicious THC-infused cookies, but the process is quite different. RSO is a ready-made concentrated extract you stir directly into your batter — fast, simple, and precise. Cannabutter from flower involves decarboxylating the flower first (activating the THC through low-heat baking), then slow-infusing the activated flower into butter over 3 hours, straining out the plant material, and refrigerating overnight before the butter is ready. The flower method takes significantly longer and requires more equipment, but it gives you full control over the source strain — in this case, Falcanna's Gorilla Cookies flower, whose specific terpene and cannabinoid profile comes through in your finished butter.
What is decarboxylation and why is it necessary before making cannabutter?
Decarboxylation is the heat-triggered process that converts inactive THCA in raw cannabis into active THC. Raw, unheated flower contains THCA, which doesn't produce the effects you're looking for when eaten — it must be activated through heat first. The process is straightforward: spread ground flower on a foil-lined baking sheet and bake at 220°F for 50 minutes. The activated flower will look slightly crispy and have lost some green color — that's the sign it's ready. Skipping this step is the most common cannabutter mistake, resulting in much weaker edibles than expected.
How do you make cannabutter step by step with Gorilla Cookies flower?
Start by grinding 7 grams of Falcanna Gorilla Cookies flower and decarboxylating at 220°F for 50 minutes. Then combine 1 cup butter and 1 cup water in a pot, bring to a low simmer, and add your activated flower. Keep the temperature at around 180°F and steep for 3 hours, stirring frequently to prevent burning. Let the mixture cool for an hour, then strain through cheesecloth into a container to remove all plant material. Refrigerate overnight — the infused butter will solidify on top of the water. Remove the butter from the water and it's ready for baking.
Why add water when making cannabutter?
The water serves two important purposes. First, it prevents the butter from burning or scorching during the long 3-hour infusion, since butter alone at low heat can brown and develop off-flavors over time. Second, water helps wash out some of the chlorophyll and other plant compounds from the cannabis material, which can give cannabutter a harsh, overly grassy taste. Since butter and water don't mix, the infused butter separates cleanly from the water during refrigeration and lifts right off the top — leaving you with cleaner, better-tasting cannabutter without any water remaining.
How do you know if your cannabutter is potent enough?
Potency depends on the THC content of your flower and how well the infusion went. Falcanna's Gorilla Cookies flower is a high-THC strain, so 7 grams should produce reasonably potent butter. The best approach is to start with a small test amount — try half a cookie and wait 90 minutes to 2 hours before assessing effects. Edibles take longer to kick in than smoking or vaping, and the most common mistake is consuming more before the first dose has fully taken effect. Once you know how your batch of cannabutter affects you, you can adjust serving sizes for subsequent batches.
What makes Falcanna Gorilla Cookies flower a good choice for cannabutter?
Gorilla Cookies is a cross of Gorilla Glue (GG4) and Thin Mint Girl Scout Cookies — two strains that are both famous for exceptional resin production, which means high cannabinoid and terpene content that carries through beautifully into infused butter. The GG4 side brings earthy, diesel depth and potency; the Thin Mint GSC side contributes a sweet, minty, cookie-like flavor that's genuinely complementary to the finished thin mint cookies. Using a strain whose flavor profile harmonizes with your recipe is one of the secrets to making cannabis edibles that taste as good as they feel.
