CBD-infused coconut oil and edibles

Chocolatey, rich and delightful. Who doesn’t like cupcakes?

These easy-to-make chocolate cupcakes are simple to make and have the perfect bakery style texture. 

Oh! And did we mention? They’re also gluten free. 

It’s the perfect CBD-infused recipe to share with friends and is sure to be a hit at your next party.

Why Infuse Cupcakes with CBD? 

Not only are chocolate cupcakes delicious and flavorful, they taste fantastic fresh out of the oven!

And luck would have it that one of its main ingredients, coconut oil, consists mostly of fats. Which makes it a perfect base to infuse products like CBD oil into! 

Ready to start? Then here’s what you’ll need:

Ingredients for making Simple & Gluten-Free CBD chocolate cupcakes:

  • For the cupcakes:

    • 1 ½ cups granulated sugar

    • 2 cups all purpose gluten-free flour blend OR Bob’s Redmill 1-to-1 gluten-free flour blend

    • ¾ cup unsweetened cocoa

    • 1 ½ teaspoons gluten-free baking powder

    • 1 ½ teaspoons baking soda

    • 1 teaspoon salt

    • 2 large eggs

    • 1 cup milk (or dairy-free milk)

    • ½ cup coconut oil

    • 1 mL of CBD RSO (Rick Simpson Oil)

    • 1 ½ teaspoons gluten-free vanilla extract

    • ¾ cup boiling water (for activating the cocoa)

  • For the frosting:

    • ½ cup butter (or dairy-free butter)

    • 1 ½ teaspoons gluten-free vanilla extract

    • ½ cup unsweetened cocoa powder

    • 4 ½ cups powdered sugar

    • ¼ cup milk (or dairy-free milk)

Instructions for making Simple & Gluten-Free CBD chocolate cupcakes: 

  1. Preheat the oven to 350°F (180°C). Position rack in center of oven. Line two 12-serving cupcake pans with paper liners; set aside.

  2. In a large mixing bowl, stir together sugar, flour, cocoa, baking powder, baking soda, and salt until there are no visible clumps.

  3. Place your CBD RSO oil syringe in a cup of hot water for about 5-10 minutes. This will help the RSO become less solid and flow much more easily when dispensing it from the syringe.

  4. Once warmed, combine coconut oil with 1mL of CBD RSO and stir thoroughly.

  5. Add eggs, milk, infused-coconut oil, and vanilla to the large mixing bowl. Beat with a mixer on medium speed for two minutes.

  6. Stir in boiling water.

  7. Spoon batter evenly into cupcake wells. Bake for 20 to 22 minutes, or until a toothpick inserted in the center comes out clean.

  8. Remove from the oven and let cool in the pan for 5 minutes, then remove from the pan and let cupcakes cool on a rack.

  9. For the frosting: In a medium mixing bowl, beat butter and vanilla until smooth and creamy. Add cocoa powder and beat until combined. Gradually add powdered sugar, one cup at a time. Slowly beat in milk. Beat in additional milk if needed, to obtain desired consistency.

  10. Frost cupcakes.

  11. Store in an airtight container at room temperature for up to three days, or in the refrigerator for up to a week.

And voila! You’ve just made a delicious, easy and fun CBD-infused cupcake, perfect for special occasions, holidays or weekends with friends.

Storing your Simple & Gluten-Free CBD chocolate cupcakes:

Your cupcakes will stay fresh at room temperature for about 2-3 days when stored in an airtight container. 

If placed in an airtight container your cupcakes will last in the fridge for up to two weeks.
